Blueberry Orange Bread


This is great with either orange or lemon
Bread
2 cups flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1 egg - well beaten
2 tablespoons melted butter
1 tablespoon grated orange or lemon rind
3/4 cup orange juice
1 cup blueberries

Glaze
2 tablespoons honey
2 tablespoons orange juice
1 teaspoon grated orange or lemon rind


Preheat oven to 350 degrees.
Grease loaf pan.
In large bowl sift together the first 5 ingredients.
Combine remaining ingredients in smaller bowl, except for the blueberries.
Add liquid ingredients to the dry mixture and blend lightly.
Gently fold in blueberries, and pour into loaf pan.
Bake at 350 degrees for 45-60 minutes.
Cool 5 minutes. Remove from pan.
